Fall Pasta Salad (Holiday Recipe)
It’s the holiday season and it’s time for some great holiday dishes that will be loved by everyone at the table. Try this delicious and easy pasta dish.
2 cups rotini pasta, measured dry (or pasta of your choice)
2 1/2 cups diced butternut squash
2 cups brussel sprouts, tops removed and cut in half
1/4 cup olive oil
1 cup kale, stemmed, chopped
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
1 cup balsamic vinegar
2 tablespoons organic brown sugar
Preheat oven to 400 degrees. In mixing bowl, add squash, kale and brussel sprouts, mix with olive oil, salt, pepper, garlic, and paprika and mix well until all pieces are coated well.
Place on baking sheet covered with parchment paper. Roast for 25-30 minutes, until vegetables are browned but tender on the inside.
While vegetables are roasting, prepare pasta as directed on the package.
in a medium saucepan, mix balsamic vinegar with brown sugar over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer.
The glaze will reduce to about half, approximately 15-20 minutes.
In mixing bowl, combine cooked pasta with vegetables and mix well. Add 1/4 cup of balsamic glaze to pasta and vegetables and serve. ENJOY!
