Roasted Acorn Squash (Holiday Recipe)
This has got to be on my top 5 list of favorite meal items. Acorn Squash has such a delicate flavor, and with the addition of the butter and brown sugar, it will not disappoint your taste buds. Make this recipe for your Holiday table and make a definite impact with your guests.
2 acorn squash, cut lengthwise, scrape out seeds, then cut in 3 inch slices across.
4 tablespoons vegan butter
1/4 cup organic brown sugar
salt and pepper to taste
Preheat the oven to 400 degrees. Arrange the squash slices on a parchment lined baking sheet. Coat the flesh of each slice with butter, then season with salt and pepper. Generously sprinkle the squash slices on both sides with the brown sugar.
Cover with foil and bake for 15-20 minutes. Remove the foil and roast for 15 minutes or until the squash is tender. Serve and enjoy!
