Red Beans and Rice
RED BEANS AND RICE
1 can dark red kidneys, drained and rinsed
1 can light red kidneys, drained and rinsed
1 small onion, chopped
2 tablespoons oil
2 cups vegetable broth
2 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon liquid smoke (mesquite)
¼ teaspoon black pepper
1 cup cooked brown rice
In large sauce pan over medium heat, add oil, when hot add onions and cook for 3 minutes until onions are tender. Add vegetable broth, liquid smoke and beans, turn heat to low and let cook for 30-40 minutes, uncovered and stir occasionally. Once time is up, remove from heat and let cool for 10-15 minutes. Take half the bean mixture and add to food processor and pulse 3-5 times. The mixture should be a thick liquid. Add garlic powder, salt, and black pepper to the beans on the stove. Return thick liquid to the beans in pot and stir to combine.
To serve, add beans to bowl and add a scoop of rice in the middle. Garnish with scallions or just dig right in. ENJOY!!
