The great thing about this recipe is you can eat it as a salad or salsa. Its a great side dish for those Sunday football games or if you’re having friends over. It is loved my vegans, vegetarians and your avid meat eater.
B - Black Beans
C - Corn
1 can black beans (drained and rinsed thoroughly)
2 cups of corn (fresh or frozen, if using frozen, heat in hot skillet until desired char)
2 avocados, seeded and cubed
1 1/2 cup cherry tomatoes cut in halves
2 tablespoons of chopped cilantro
2 tablespoons fresh lime juice or lime juice concentrate
salt and pepper to taste
In large mixing bowl, add beans, corn and tomatoes, stir until well combined.
Add avocados, cilantro and lime juice, stir until mix thoroughly.
Add salt and pepper to your desired taste.
Serve with tortilla chips, nachos, or even a salad, ENJOY
