Avocado Alfredo with Grilled Chik'n
The addition of the avocado gives this dish a creaminess and amazing flavor.
Avocado Alfredo with Grilled Chick'n
2 ripe avocados, seeded
3/4 unsweetened nondairy milk
1/4 cup nutritional yeast
1 tablespoon oil
1 teaspoon minced garlic
1/2 teaspoon salt
Your choice of noodle, ( I used whole wheat pasta)
Mash 2 ripe avocados, garlic, unsweetened nondairy milk, nutritional and salt.
In a small saucepan over medium heat, add mix and bring to a boil, reduce heat.
If making pasta, bring a separate pot of water to a boil. Cook pasta according to package directions.
Drain pasta, then set aside. Stir in the pasta and remove from the heat.
Serve immediately, by itself or with a Gardein chick'n scallopini patty. Top with vegan parmesan .
