Vegan Burrito Bowl
1 pouch Long grain, wild rice blend from whole foods or you can make rice ahead of time and use.
1 cup of peppers and onions mix
1 can black beans, drained and rinsed
1/2 cup salsa
1 cup vegetable broth
1 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon chili powder
Salt & pepper to taste
Heat saucepan on medium high heat add 1 teaspoon oil add pepper and onion mix, garlic powder, cumin, chili powder. Stirring occasionally until mix is tender.
In another saucepan, add vegetable broth and beans over medium high heat, bring to bowl then reduce to simmer. Cook for 10 minutes.
Place cooked rice in a bowl, with pepper&onion mix, black beans, add salsa and your favorite vegan sour cream.
